Chez Chanelle’s Maple Glazed Salmon
The Fish That Feeds a Forest
There may be no species more closely connected to British Columbia than Pacific salmon.
Salmon begin their lives in freshwater, travel to the ocean, and eventually make the extraordinary journey back to the rivers and streams where they were born. But their story doesn’t end when they reach their spawning grounds.
Salmon are a keystone species across marine, freshwater, and terrestrial ecosystems. Returning salmon carry nutrients accumulated in the ocean back into B.C.’s watersheds. Bears, eagles, wolves, and other wildlife feed on them. After spawning, their bodies return valuable marine nutrients to rivers, surrounding forests, and the soil.
In this way, salmon quite literally help feed the forest.
That extraordinary connection is part of what makes salmon so symbolic of British Columbia. It is also why thoughtful sourcing and responsible stewardship are so important.
This maple glazed salmon celebrates the ingredient simply, pairing a beautiful piece of salmon with a sweet and savoury maple glaze that caramelizes as it cooks. It’s approachable enough for a weeknight dinner but special enough to serve when you’re gathering people around the table.
Maple Glazed Salmon Recipe
Serves 4
Ingredients
- 1½ to 2 lb salmon fillet
- ⅓ cup pure maple syrup
- 2 tbsp soy sauce or tamari
- 1 tbsp Dijon mustard
- 2 garlic cloves, finely minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- ½ tsp freshly cracked black pepper
- Sliced green onions, for garnish
- Sesame seeds, for garnish
- Fresh lemon, for serving
Method
- Preheat the oven to 400°F.
- Whisk together the maple syrup, soy sauce or tamari, Dijon mustard, garlic, lemon juice, lemon zest, and black pepper.
- Place the salmon on a parchment lined baking sheet and brush generously with the maple glaze.
- Bake for 8 to 12 minutes, depending on the thickness of the salmon, until just cooked through. Brush with additional glaze during the final few minutes of cooking to create a glossy, caramelized finish.
- Finish with sliced green onions and sesame seeds, then serve with fresh lemon.
